Like several of the young vignerons in the Jura, Julien Mareschal wasn't born into a vine-owning family. In Julien's case, he came to the Jura at the age of 23, from an agricultural background, after studying agronomy followed by oenology at Dijon. He now has 5 hectares of vines in and around Pupillin, some at the highest elevations (550 meters) and all his vines are organic or in conversion to biodynamic. His Ploussard is made without the addition of any sulfites; other cuvées have only tiny amounts added at bottling. Only indigenous yeasts are used in the fermentations for all of his wines.
